Simply Summer Snacks: Homemade Hummus

Here is a simple and cost-effective recipe for what has become one of our family favorites–hummus. At the grocery store a small container of hummus can cost up to $3 or $4 dollars. This recipe makes about twice that quantity for half the cost! You can vary the seasoning with this basic recipe making it a bit spicier if desired.

Homemade Hummus

Dried chickpeas (garbonzo beans) about 2 to 2 1/2 cups or canned
1/4 cup water
3-5 T lemon juice (depending on taste desired)
1 1/2 tahini (sesame seed paste)
2 gloves garlic, crushed
1/2 t salt
1 T olive oil

If using dried beans soak for 24 hours and drain. Combine all ingredients except water in blender or food processor; blend. Add 1/4 cup water, or enough to make the consistency to your liking. Blend on low until thoroughly mixed and smooth. You may wish to add more salt and garlic to taste; be sure to mix it in thoroughly. Store in airtight container and refrigerate what you donʼt eat. Great served on your favorite crackers or pita chips. You can also serve it with a little pool of olive oil on top if you like.
