It’s that time of the year where pumpkin recipes are popping up everywhere! Â Here is a pumpkin muffin recipe that will not disappoint. Â I have also whittled it down to be as healthy as I could without sacrificing the taste of this moist, delicious treat!
Pumpkin Chocolate Chip Muffins
Ingredients:
- 1 (16 oz) can pureed pumpkin
- 4 eggs
- 1 1/2 c sugar
- 1 1/4 c olive oil
- 3 c flour
- 2 teaspoons baking soda
- 2 teaspoons baking powder
- 1 teaspoon ground cinnamon
- 1 teaspoon salt
- 1 c of mini chocolate chips
Instructions:
Beat together pumpkin puree, eggs, sugar, and oil until smooth. Â Combine dry ingredients in a separate bowl and then add to beaten mixture. Â Mix well and add in chocolate chips. Â Put batter in well-greased muffin tin or paper-lined tin, and fill each cup 3/4 full. Â Bake at 400 degrees for about 15 minutes. Enjoy!
